3 B's.. bacon, beef ribs, birthday

I always like to try something different.. After reading 73saint 73saint doing bacon, and studying SmokinAl SmokinAl , I decided to try doing bacon. I didn't start the post last week, cuz why look at pork belly in the fridge? I did a 3 -1/2 lb black pepper and 5 lb brown sugar/maple syrup. Smoking with Apple and Alder in the tube. Amazingly enough, even with the heat today, I'm holding at 82°
As far as the beef ribs and birthday, my dad's dog was injured last year and my dad missed beef ribs for his birthday. I'm going to remedy that tmrw with these beauties. I'll post pics of that cook too.

I admire you guys that do bacon. And beef ribs for the dog? I have to pay the butcher about seven buck a pound for them. Sorry dog but I ain't sharing
 
Jeez... Edited last post to clarify. The ribs are for my DAD.. I couldn't care less about a dog

Mother Nature has not cooperated overnight. Rained it's butt off last night, but I got the bacon smoked. Sliced a little piece off the end to season my cast iron.
Moved on to the beef ribs. Little kosher salt and some big bad beef rub. Hit the OK Joe at 0500. Kind of surprised the smoker could take all 4 racks no problem. Last time I did beef ribs, I did it on a UDS. That was a tight fit.

Birthday for Pop went well. Hot dogs, hamburgers, sausages, all the sides. 10 people and a dozen dino ribs. Cheesecake and coffee for dessert. Turned out awesome!! So nice when the love we have for our family shows in our food
