3 bone dyno rib question.

How much are you guys paying for them at Costco, Sam's, or restaurant supply?

Doe's $17.00 per pound sound about right?

I need to pick some up, they finally started showing up around here.

I went and grabbed two pk of 3 bones, that are nice and meaty, it was $17.49 per pound if I remember correctly. I bought a few other things and was out the door right at $150. Not cheap but they look damn good, I hope I can do them justice, I've only done them one other time. Gonna have the folk's over either Monday or Tuesday night, neither of them have had them, so I hope like hell I can do my part. It will just be four of us, so I'm just gonna smoke up one slab, and save the second one for another occasion. They will most likely get smoked on my new Santa Maria offset smoker.

Maybe the drum smoker if I'm feeling lazy. JC in GB JC in GB was kind enough to make me up two PID controllers (one for a back up) for my upcoming rib cook off, so that's my contingency plan if the offset cooker starts to go sideways, like it does at times in the wind. If I don't decide to use the drum, you can bet that it will be on, doing a test run to see how these PID things work. I've never used one before, unless you count my old PartyQ, which is a total diff animal.

Dan I haven't bought any in awhile, but $10/lb. seems like what I've seen them selling for. Just checked US Foods Chef's store and they have bone-in angus short ribs for $6.69/lb. Not much description on the website, but this might be a case price...

Thanks guy's, I bought them at Restaurant Supply, I just weighed one of the 3 bone plates, and it's 7 lbs.

Damn, Shawn, I sure wish I could find them at that price around here, brisket and beef bone cost a premium out here.

Charles, we have a US Chef Store a few miles from the house here, and they never have the big Dino's, they always have an inch to inch and a half of meat on them. I'll check them out for sure Tuesday, just to see what they have, as I haven't been in there in a few months. Man, I hope they have them at that price.

The batch I got yesterday are what I would call true Dino's they must be 2 1/2'' thick raw, I can't wait to see what they plump up to once they are smoked. I just hope this crazy wind we are having dies down for the cook, it's been howling for two days now, so I might get lucky.
(I'm not complaining though, at least it's not hot, YET!!!)
