3-2-1 Spares in under 4 1/2 hours

Flash, I too have been messing around with the 3-2-1 idea. The last time I did spares, it was 3 hrs at 250, then foil for 2 hrs at 320, then last hour at 320 unfoiled. My results were- the spares still very juicey and tender inside (not quite falling from the bone) but the outside of the spares were just starting to get dry. Added texture was great.
I will repeat this method in tomorrows smoke and will repost here with the results.
