2nd round of cheese

got some more yesterday. foodcity had their generic cheese 2 for $4 so i went ahead and got some. 2 motezerella, 1 mild chedder, 1 chedder/jack mix and 1 creme cheese. used 100% apple in anmps this time instead of hickory/apple mix. had 1/8th thick slice of creme and chedder for *tasting* purposes. pulled them after 45 minutes or so. heres a in process shot, no done shots, 4yo moved camera and I couldn't find it for a finished shot. looks good though, PROMISE! creme sample was EXCELLENT!

you can say that again. as if last nite wasn't enough, we went to the store and got 3 more blocks of creme to do tonight. got some swiss so i can send it down to my best man in FL. got round 3 on the smoker now. sliced one block of creme into 1/4s length wise so it will hopefully be pretty good to eat this evening. love your lil smoker unit i got from ya man. working like a charm....Qview for round 3. pulled the sliced block of creme off bout a hour ago, already eat 1/2 of it, worked out well splitting it as i did. swiss and other 2 creme are baggeg & tagged. don't think creme will make it 2 weeks.swiss got some color to it but creme didn't get any color at all, smells and samples well though.

Looks great! I'm not sure the cream cheese has to wait the 2 weeks since it's soft, but I'm not entirely sure on that.

beats me if it needs to or not but it got bagged/tagged just like the rest. any idea if creme would keep like chedder, swiss etc, when mailing as gift?
