As a long time fan of beer can chicken I finally tried this recipe for Loaf-pan Chicken. Coated a 3 1/2 lb chicken inside and out with a mixture of applesauce and Worcestershire sauce and then a dry rub. Acorn squash was brushed with olive oil and then salt and peppered.
Used applewood for smoke on a 26" Weber Kettle grill. After an hour I basted the chicken with applesauce and liquid from the bottom of the loaf pan and put on the acorn squash. The squash was flesh side down for 30 minutes, turned, and then covered with a glaze butter, apple cider vinegar, and maple syrup. Chicken was on for a total of 2 hours and the squash for one. (What look like flames in the photo below are not, just due to the long exposure time because of darkness).
Chicken was super moist and tender. The turbinado sugar and applesauce added the right amount of sweetness. This method is definitely fool proof. Acorn squash was a great side. I plan to do both again.
