Was off work for a few days and decided to throw a butt in to snack on for a few days. Gave it a good rubbing and threw it in at 225*. The temp hovered around there for the entire smoke. I didn’t foil when it hit the stall because I love a nice bark. I had nothing but time so I just let it ride for 26 hours. When it was done I decided to throw in a dozen thighs also. Enjoy.

Man that looks good. Looking forward to seeing the details on this one. I set my 11# butt to 200 last night about 2000 and this morning at 0830 when I rolled out of bed it was surprisingly at 175 already. I would think 26 hours at 225 would over cook it and turn it to mush, but it doesn't look like that is how it turned out.

I haven’t been foiling them through the stall in a few years years now. Always come out great and usually take about 24 hours. You can turn up the heat during the stall and push it to get done quicker. I usually just let it ride. Let’s the neighbors drool a little longer.

I cook mine (8# to 11#) at 225F also. Just brine and rub, no injection or wrapping. They take anywhere from 10 to 13 hours. I did cook 1-10# at 200F then turned up to 275F and that took 16 hours. Man 24 hours is a loooong time.
