I had two bags of scrap left from my deer this year and with my new smoker I figured to try to make some sausage. Picked up a kit from hi mountain (cracked pepper and garlic). I did a 60/40 mix with venison and pork I got from the local butcher for $1.29/lb. ground the meat mixed seasoning ground again add water and stuff. Let sit in the refer over night and put them in the smoker this morning. Everything was going great until I went to check on them and the strings that come on the hi mountain casings were breaking!!!!! So I had to set them on the racks in the smoker. They turned out but I was really disappointed the strings broke on my casings. Anyone ever have this problem with hi mountain? I smoked at 120 for an hour no smoke. 140 for an hour smoke. Then let it slowly rise to 170 with smoke. Left them in the smoker Til they hit 156. Pulled gave them an ice bath and they are sitting now. Will let them sit overnight and package in the morning. Also had leftover pork trimmings so I made some breakfast sausage right away. No q view on that bc it didn't get smoke but I will tell you that it was fabulous. Enjoy the pics.
 
Yes the flavor is excellent. I don't know if I will buy from them again due to the fact the strings broke on the casings less than two hours in. Just happy they all turned out.

Summer sausage is on my list of "to-dos"...those look like they turned out great, color/texture look perfect.

I like the Hi-Mountain products, but I have not used their strings? I usually just ask my local butchers (King Soopers and/or Albertson's) for butcher's twine....10 out of 10 times they give me as much as I want...free! I would inquire and just replace the HM ones? As we live in a consumer based world, I'd let them know of your experience with one of their products, not as an angry sausage maker (never make sausage angry), but as a concerned user of their products...I'm confident they'll make it right...I spoke with them about an question about some of their casings...they were very attentive and helpful?!

Looks like you did a great job. i buy the non-edible fibrous casings for summer that are pre- tied with a loop on one end and after stuffing i tie the other end with a butcher knot with butcher string myself and hang with the pre-tied end. Never had a problem with those. If you like the seasoning from Hi Mountain, just get some good butcher twine. Reinhard
 
Thanks for the compliments and suggestions guys. I will look into all of them. I drew a bear tag this year so if I'm lucky enough to get one ill be making plenty of sausage to experiment.
 
that looks dang nab it good. great job, I'm not a big Hi Mountian guy but I do like Hi Country packs and have done a lot of theirs and never had a problem.

Just to let everyone know I contacted hi mountain and told them the issues I had. They are sending me a FREE sausage kit. And their customer service was outstanding. They said they were going to look into the issue and I even talked to someone in production so they knew exactly want the problem was. Overall it was some of the best customer service I have ever interacted with.
 
That's good to know. This way they will correct the problem. I always told the guys when i was working that it's easy to loose a customer, but very difficult to get them back and Hi Mountain sounds like they have great customer service and will retain customers this way. Reinhard
