I made some 10 lbs of summer sausage  using a packet of Lem's mix.  Through it in the smoker and it came out looking fantastic.  As it is cooling, it appears to be shrinking up.  Is this normal?

They'll keep shrinking till thier gone.........LOL

Did you place them in a cold water bath to stop the cooking process and soon as they came out of the smoker. The will shrink a little.....
 
I had used  a Lem's Summer Sausage packet that came with  my 5 Lbs. Stuffer.  The texture was right on (medium  grind) as well as the taste.  I will need to make some next time from a recipe to see how it tastes but for this run just wanted to use  up what I had. 

As far as the water bath to cool them down, no.  I thought I had read that somewhere but couldn't be sure so I let them cool on wire racks.  The 50/50 mix of pork and beef may have had to much fat but they sure do taste good.  The first log didn't make it a whole day.  The grand kids loved it.
