I had the meat ends of some pork ribs dry up on me the other day when I tried to use my V-rack as a rib rack and got the bright idea to cut the ribs into smaller sections and stand the sections up vertically in the V-shaped roasting rack lol. Well just the top ends dried up some, the bottom ends that rested in the foil pan were fine.
That was fresh in my head when I was doing my research and prep for smoking the beef ribs lol.
