Put this 12 lb beauty on @ 10:30 @ 250. Plan to wrap around 160 IT and pull and rest in cooler around 11am. Loaded the bin with MB lump but don't really have an idea on how long it will last. Any expert advice appreciated!

Have no idea on burn time, but would guess at 250 you will get 10 hrs or so. Should be fine until morning. Looks good. I’m pulling for your PP! Ha!

Thanks ! I was hoping for 10 . I'll place the probe in couple of hrs to monitor IT. And set alarm to check on fuel .

3 hrs in and the bark is setting nice. Used Kosmos SPG ,
Honey Killer Bee and a sprinkle of a pecan rub.
Decided to mop using this. Never used it but smells great !

Looks good so far. Let us know how that mop sauce is. I've never used a mop sauce on PP, but would try it next time if I find a good one.

Decided to go naked....no the PP.....love the color and smell. Bumpes the temp up to 275 after 5 hrs. Total cook time 9.5 hrs. Probing tender at 195. No wrap time and rest till the kids come over for lunch. I try to get a pulled pic. Yeah I let the pan dry out and wasted that liquid gold ;)
Bark does not seem to be firm. Did the added water pan create too much moisture? Or maybe the mop ?

Looks like you nailed it to me. Mopping will keep bark soft. I don't like hard bark anyways.

Thanks Jake. Now if I cam wrap without losing all of it ! I used to go unwrapped on the old red Brinkman. Never spritzed and had a harder bark. Easy to wrap.

Used an extra large spatula and got her transferred to foil . Double wrapped and in the cooler for safe keeping. Bark seems to be a little firmer than I thought.
