Just did my 1st brisket on new smoker .11lbs smoked with red oak and hickory..12hrs to get to 200° was pretty windy earlier today for a while.turned out juicy and very flavorful red oak and hickory together.great combo definitely doing it this way again.soaked in Worcestershire garlic powder seasoned salt pepper overnight. Can't stop eating it..

Thanks a buddy just built that smoker last year for my 1st one really worked good .the wind is not your friend....lol. it was so good definitely trying it again that way if it stays consistent no need to do anything .flavor with the red oak and hickory was great...

had a nice good smoke ring to. used butcher paper and tied it after it got to 150 and stalled..definitely staying with butcher paper from now on held the bark kept it hot and moist .after 2hr rest it was still steaming hot... thanks
