Yup. Love the crystals.... got it at the Mennonite store... I would wager they buy bulk from Great Lakes Cheese and resell....Oh yeah! The crystals should knock your socks off! I love really aged cheese.
I saw aged cheese at our Mennonite store as well. And that wouldn't surprise me. Great Lakes has really good cheese. As well as River Rat. Their 20 year cheese is simply amazing.Yup. I had some 14 year XXX from the store and it was absolutely delicious!
I had a few blocks of 20 year that I let go another 2 years. The flavor is truely phenomenal! Sliced with a hearty red wine sausage. Oh, man!Damn, 19 year… that has to be phenomenal! Good for you to be able to try that!

I hope I didn't offend you Jim. I was just kidding. With this type of cheese. I don't usually have crackers right with it. Maybe after I had a piece of cheese. I want to enjoy the full flavor of the cheese without it being clouded by the starch from the cracker. Saltines/ Or water crackers work well because they are somewhat neutral in flavor.So should I put it on saltines?
