Hey everyone. I just put my brisket in my smoker and it doesnt lay flat, or sideways. I sure aint going to cut it in half to make it fit, and I want to wait to seperate the point from the flat untill after it has cooked. I just put it in there on the rack with either end folded over to form what kinda looks like a bridge. Will this be okay? It should shrink as it cooks right?
