Doing a brisket on the 4th. Is 1/2 lb / person of trimmed prime brisket enough for 15 seniors?

Agree should be plenty unless they are all football players or something :emoji_laughing:
 
The smart Alec answer would be : depends on how good the brisket is. But I won't go there. My basic rules of thumb is 1/4 lb finished weight of the protien, if there are a couple of sides.

Depends on the sides and other proteins too. I've had some turn out soo good that it was 1/2 gone by the time I served because we picked through it while carving.

*might not have been as good as we thought, we had been drinking beer for 16hrs straight and were also hungry.

8 oz of a single Plated Protein is common. 4 oz portions are ok with multiple proteins or sandwiches.
Senior Citizens can be tricky. I managed food production in a Retirement Community/Nursing Home. We served 6 oz portions of protein. Some of the 70-80 year olds, in good health, asked for seconds, a 1/2 portion was served. The rest was good with 6 ozs With the 90 year old folks, some didn't finish others, were fine. Women ate smaller portions across the board, typically 4 oz. The LAST thing you want is Old Guys thinking they are being given a, Childs Portion. They will be insulted and let you know in a hurry...JJ

Great answer JJ, and very accurate. I tend to over cook (prepare more than you think would be needed, not over cook the meat <grin>) because I can always portion out the left overs and freeze them for later. My biggest fear when entertaining is running out of food and offending somebody. Since I tend to cook more than I feel is required, the general rule of thumb is "eat (or drink) as much as you want until it's gone, then you can't have any more". Blessedly, nobody has ever left my table hungry but I do have a freezer full of leftovers, which we do use on a regular basis when time is short in the evenings.

Thanks everybody. Had plenty of brisket for 15 people, with enough leftovers for at least 2 meals for us. Best brisket I have cooked so far. This was my 5th.
