Did a batch of wings using my favorite method for pretty much any cut of chicken....0-400. Dry brined the wings ( just salt ) for just about 48 hours. A light spray of oil ( was out of my normal duck fat spray, so I used high smoke point olive oil ) and dusted with pepper and poultry seasoning. Into the cold MAK 2 Star skin side down, and hit "Ignite". At 30 minutes, the grill was up to 400, and flipped the wings over to skin side up. Another 20 minutes or so, and pulled them at 195-200 internal. Gave them a light coating of Texas Pepper Jelly's Bird Bath ( Peach Habanero ). Fried taters for a side. Damn good!

The 0-400 is a new approach for chicken wings for me. Is this to let them absorb some smoke as the grill heats up? They look great BTW! Nicely done! Congrats on making the Carousel!

Thanks! Yes, that's the basic idea, gets some of that start up smoke on the bird before the basically smoke free high temps kick in. Plus, it saves a little time not waiting for the smoker to warm up. From the time I put the wings in the pellet pooper and hit go, to being done, was just under an hour. I even use it cooking leg quarters, 1/2 chicken splits, etc. Doing it this way for a couple of years, and really like the results.
 
The wings look good. I'm on board up to the Habanero. I'd need to skip that part. Good job.
 
Those look great! A buddy of mine told me about this method a month ago, first I heard of it.

those look fantastic.
At least on my smoker I wouldn't want to do the 0-400 method because my smoker will throw some dirty smoke at around 100F as it heats up, and I need to wait for that to clear before putting anything on it.
