I'm looking at two smoker companies making me one. I can get more smoker room with ¼ but will I like the ⅜ that much better to give up the few feet of cooking space?

How do you figure you will loose cooking space? Stainless sheet in that heavy gauge will be quite pricey. Can you elaborate a little more on your idea?

But you won't lose cooking area. Your wall thickness just changes. If you are ordering a rolled plate you tell them the diameter and length of the rolled barrel when finished. That being said I'd stick to 1/4" no matter if you go stainless or mild steel. I'd get a quote on it before you order it especially if you are working with a strict budget.

The ⅜ I'm getting a smaller size smoker than I would with ¼ for the price. Therefore losing cooking space

Since there is only 1/8th of an inch difference, I'd opt for the 1/4 inch and get more cooking area.
