    Mmm... leftovers.

    Tried a few new tricks this go around... overall I was pleased. The legs were injected and smoked - delicious as always. The rest of the bird, I pre-carved, dry brined, injected, sous vide and then smoked. Lots of work, but delicious.

    First post!!! Found some turkey legs on sale at the local Tom Thumb. Brined for 24 hrs in LEM cure, Smoked Paprika, Salt, Brown Sugar, few Bay Leaves, and Jalapeno Garlic Seasoning. Dusted with paprika and the Jalapeno Garlic Seasoning before smoking over apple pellets on MEB @ 225 for 8-9 hrs...
