For butts i always smoke them overnight but i also dont like foiling my meat unless i have to, which is definitely an option you could use to insure the meat will be done in time. Its just a personal thing about not using foil. Like whats said above a WSM and an MES will do good for overnight...

I just wanted to share my smoke for this past Sunday dinner.
This smoke was intended for Saturday but due to feeling under the weather i postponed it for a day.
So i used a store bought rub called "Mamas Rub" by Dirty South BBQ its one of the best store bought rubs i have ever found...

Hmm... i suppose the heat could be an issue of wear and tear on the tray its self. Then maybe I could crush up some KBB and try it that way since KBB doesn't get as hot as lump... Hmmm i am still in the planning stage ill be sure to post my findings if i get around to an experiment.

And you will have to keep in mind a lot of factors play into how well/long these burn as in, Brand of pellet, Density of pellet how you store the pellets, air flow in your smoker, and likely many more that can prolong or shorten actual smoke time
