Anyone have tips on the cooking process of ground meat jerky? I read the link that was posted but I'm thinking some of you may have perfected it a bit. Ill be using a 40" MES with smoke tube. My basic questions are:

So i have been experimenting with some recipes for a garlic kielbasa in natural casings. My stuffing process if quite easy.
Soak casings 30 mins warm water
rinse inside twice, soak in clean warm water 30 more min
rinse again
