    Brisket froze up

Bought a full packer that was sealed and packed on the 8th with the plan to wet age for 30 days.  I set the fridge on high because I presumed people would access the fridge about once a day.  Went to San Francisco for a week and came back the other day to a frozen brisket.  Lowered the fridge...

    crock pot concern

This isn't smoking oriented, but more temperature concerned. My wife let me know she left chicken in the crockpot this am on warm and wanted me to turn it up to high when I got home. That was 8 hours ago. Now the temp of the broth was 163. But I guarantee it was a long time to climb that...

    MES 40 differences

Does anyone know if there is a difference between the MES 40 offered by walmart and the one at sam's club?  Only thing I see is the drip tray at walmart is in the rear and there is "stainless" in the title.  Any differences in performance between the two?

    considering a new smoker

So I've had my mes40 for a year now and the control panel bubbled up from condensation with some of stress cracks around the front panel. Masterbuilt was cool with their warranty and sent me a control unit fast...other parts on back order. My local Costco has their display model landmann 40"...

    day before ribs

So I am smoking 6 racks of spares, a brisket, and 2 pork butts for a family reunion with only one mes40 smoker. My thought to get this is to do the ribs for 5 hours the day before, then refrigerate. When the brisket and pork finish, either throw them back in the smoker for an hour or on the...

Smoker temperature and which to go by

Bought an MES 40 last year and finally broke down to buy a wireless thermometer to gauge what the actual temperature is in the smoker. I bought a weber dual thermometer I saw at lowes with the metal prongs similar to the meat thermometer attached to the smoker.  I was curious because I tend to...

Turkey for first time on MES40

Just finished my first smoked turkey. The it in at 645 this am and by the time I got home at 1230, the temp was reading 180s in multiple parts from multiple thermometers. It's a16 lb turkey that was put in at 250. Seems like a really short cook, but this smoker seems to finish well ahead of...

smoking a variety of meat including a small brisket

So here's the dilemma. I am making a bunch of meat for a potluck Friday and brisket was asked for on top of pulled pork and ribs. I don't want a whole brisket doomed for fear of it going to waste. Stores around here sell flats and points individually. Which would be the better side to get?

Smoking brisket for the first time

I'm New here and will be smoking a brisket I picked up today at Costco. The meat looks good, but I realized after I got hone Most people smoke brisket in the 8 plus pound range. the one I bought is only four. If I was following a step process that called for a 8Lb brisket, would it be ideal to...
