Pork belly is done it's brine/rinse and dry vacation and now I will magically turn it into 5 lbs of bacon lol. I did it in the pellet smoker to the IT of 150 then pulled it to cool and I had to square up ( at least thats my story) one edge so i got to taste test it lol

got some top round steak for 1.99 a pound so i got it and cut it up. I had enough to freeze for 4 meals also tonight's meal and send one decent steak back to college with the kid.
plating is ugly but gosh it was good. Steak with Onions/Blue cheese crumbles/Coleslaw and Sous Vide mashed taters.

Couple eggs with seasoning topped with baby Swiss and sprinkled with another rub
