    i start probe checking for tenderness at 190 because you just never know. I had one fall apart at 14 hours and IT of 190 and if i had blindly cooked that one to 2-3 or 205 it would have been over done

    top round. I tend to always over cook in the sear stage so I SV 110 for 1.5 hours then sear.

    I've had a 7 pound but go 17 hours. Its frustrating for sure but patience and time are your best friends. Good job

    the bark will suffer wrapped in the oven or smoker. If i have to go to the oven i go in a foil pan unwrapped at 250 and spritz just like i would if it was in the smoker.

    This is a perfect example of why I never cook to a predetermined temp of say 203 or 205 because thing was falling apart at 190.

    Put this in last night around 9pm and it is now it has just climbed out of the stall and currently at 183. Stay tuned for the rest

    I had to cut it in half to fit on the slicer so its a little shorter than I wanted. But next time I will just cut a couple inches off one end for burnt ends and it will fit the slicer and be plenty long enough slices I did it on low smoke until 150 IT and then let it cool but decided after i...

    Well I threw 4 hours of cold smoke at it and tested again. It is soooo much better now. I'll let it cool and put in fridge for slicing tomorrow. I see BLTs for dinner tomorrow night lol.
