Take the racks to the plating shop an d ask them what the plating is on the racks.  You might be fine or if not they might be able to strip them for you. You also might be able to strip them yourself.

If you have a PID controller. What are your PID settings? Heres mine.

Perhaps I could have been clearer.  I don't want to build a PID I am going to build a smoker and use a PID to control the temps.  My reference to luck and chance more refers to my grilling experiences.

If you have a PID controller. What are your PID settings? Heres mine.

No engineer.  Just a locksmith.  My interest is to be able to get the device to do what I want it to do with out luck and chance being a factor. I want to build my own because buying something off the shelf means you get what someone else designs and builds and their decisions are usually...

A-Maze-N vs ProQ Cold Smoke Generators

What you do is to package some large fragile (but not too expensive) items in large boxes using the saw dust as packaging materiel.   Or in the alternative, buy yourself a table saw with a dado blade and then just get some wood and make your own saw dust.  @ $14 per pound I think I would make my...

OK sounds like something is hokey here. It sounds to me like you had an electric stove element that you jury rigged.  If you plug it in straight into the wall, can you bring the pot of water to a full rolling boil? When you had the PID controlling the water and had it set on 200F, what were...

    newbee brick smoker build

OK, I read the thread and a couple of things come to mind.  First off, Wes is a master mason and he used fire brick to line the fire box.  (I am not a mason nor an expert.)   If I was going to do such a project I would consult with a mason that knew his stuff.  If you go through all the work...

I'm glad you asked.  The do make immersion elements but the regular ones will fail if you get them wet and you might be in for a nasty shock.

    Metal type & propane question

Any heat source will work, but how do you want to control the heat?  With an electric element you have a simple and accurate way to dial in your temps and you just plug the thing in. Now all you need is a smoke generator and you are good to go.  Propane has some issues.  First off are you going...

This should be :What you are doing is testing the thermocouples and the readouts to confirm their accuracy.

NO!!  Do not immerse your heater in water. Get a regular hot plate and a pot if water.  Plug the hot plate into the PID.  Now perform your tests.   The PID does not know what is plugged into it all it does is to turn on and off what ever you plug into it.  What you are doing is to test the...

    My first build

On the PID question I would plug the PID into a hot plate and see if you can keep a water bath @200F.  Put a sheet of wood over the top so you can suspend the temp probes into the water with out touching the pot.   (You also have your regular thermometer probe in the same pot.) Once things...

    Will this fridge work?

An outrage!  Why they ought to be paying you to haul it off. While that may have been true 20 years ago, now the price of materials to build one from scratch would be a lot more.   It kind of depends on the buyers mind.  I have no problem with the price. Also you might think about how you are...

    newbee brick smoker build

How the bricks are going to act in the heat is the question.  Regular brick might tend to trap a bit of moisture and when heated, the moisture turns to steam and blows little bits of brick around.  You might be OK if the fire wasn't too hot.

    My second smoker Build

OK here is an idea.  Make a truss.  In the center of the bow on the convex side, weld a block.  Also weld two angle iron tabs on each end that have a hole in the part that is sticking up. Now get some threaded rod and feed it through each hole in the tabs and over the top of the block.  When...

Resources for buying meat. Price is getting ridiculous...

I went to the store yesterday and was noticing that the pork chops were cheaper than the ribs with a heck of a better meat to bone ratio. In the poultry department wings were a buck a pound more than leg quarters.  It used to be that the cheapest way to get chicken was if you got the whole...
