Well not as good of a buy as Memorial Day, but I ran in and grabbed one of the 2/20 pound Kingsford Charcoal. 13 bucks and I now have 160 pounds. Will be awhile before Labor Day gets here.

So I did St Louis style ribs today, and I have allot of this skrit, brisket bone meat. I smoked it along with the ribs. Taste good looks good, will good with dutchs baked beans. What else can I do with it.

Wife went to Dillons today and brought 3 chickens home for me to smoke. So the WSM is sitting out here doing about 325 degrees. Thought I would try a hot fast smoke. She also brought home two racks of spare ribs. So I'll trim those up and throw them on tomorrow.

Smoking three racks of ribs and then 3 whole birds. I am going to do chicken halfs seems allot easier to handle. I have a bag of pecan thinking that would be good for the birds. I used maple,hickory and cherry for the ribs.
