    Did my ribs in the mes. Took off the membrane. Patted them dry. Covered them in my basic rub. Got the mes sitting at 225 After a warm up. Fired up my amznp with a plethora of pellets. Did two initial hours bare then foil and apple juice for two then the one uncovered. Ribs came out hands down...

    Loving my amnps (what pellets next?)

    I love my amnps got the package with 2 lbs of hickory maple cherry and oak.  I'm going to order up some new pellets.  Certainly want to get the pit master blend to try and some alder for some salmon.  Besides that anyone have any suggestions or favorites?

    Venison Sausage smoking question

    Got a big bunch of frozen venison brats and sausage from a friend.  Never smoked venison yet.  Plan to smoke it at 220 to an internal of 160 on some hickory.   Hows that sound?  Am I missing anything?  Thanks for any input!

    Back to the MES40 third run with it and the amnps.  Did it right this time with a layer of hickory below my cherry pellets got the whole thing lit with ease and got over 9 hours of smoke out of it.  preheated the MES for 30 minutes at 275 dropped it down to 220 followed all my amnps instructions...

    All my equipement purchases completed for getting started.  MES 40, Maverick thermo, and AMNPS.  smokejunkie and I kicked some beers back and let this thing season.  have my thermos boil and ice batch checked and got an idea of the difference from the maverick to the built in mes temp reading.

      New to the forum. I'm an avid griller love my charcoal performer and Weber rotisserie.  Do a good deal of brewing. Enjoy fine cigars and a scotch. Have done some smoking with my Weber performer using the smokanator but not a lot.  I'm looking at making a purchase soon of MES 40 and pairing...
