    I found straight hickory to be a little strong. I've been using oak and cherry on butts and ribs. Did a rack of ribs in beech, Wow!

    Forgot the beer butt chicken. It was extremely good! I have the new grinder, casings and a pork butt ready for the next step. I guess I'm going to have to hone my photography skills?
