Problem with that is my food probes are the thermoworks needle probes and they are quite large at their base; I would have to have a pretty big hole. I'm not sure if I could feed them through jack first as its a 90 degree connector. That's why I was looking into alternative methods.

Thanks for the idea, i came across your post the other day and have it down as an option. Here is a picture of the rails and clips id really like to use. Like I said the only issue is if there is enough room or a way to get the grate to fit past the installed rails.
