    I smoke mine 2 to 3 hrs . Gives it just the right amount of smoke. I pull them when internal temp hits 155

    looking to buy a new wireless therm system.

    I have yet to find a good wireless probe . I bought  two different maverick thermos .  They both lose connection . I just buy a probe from wal mart  14 bucks .I know about how long it takes to smoke meat , so its not a problem .

    I rack it till internal temp of 160 then foil to finish and catch the juices.At 200 i put it to bed in a cooler to rest for 2 hrs .

    Welcome looks mighty fine those yard birds. I to have a traeger i supplement for better smoke with the AMAZING smoker from Todd it adds just the right amount of smoke check it out .

    Prime Rib Roast, Smoked Ribs

    I have never had that problem and i always remove the membrane .I suspect the meat is fall off the bone tender.I like mine to stay on the bone after each bite.Try not to foil as long that should help.
