    I was talking to friend the other day about smoking meat and they asked how bad is it for you, aside from the fat and calories. I said, well you are ingesting the byproducts of combustion so I assume that might be considered carcinogenic. I did some Google searches and really did not come up...

    Harry Soo from Slap yo Daddy BBQ swears by Kingsford Blue in his WSM, but I really am torn. It burns efficiently and is very predictable but I just feel like I can taste that chemical filler and doesn't make for as good of a smoke session. Anyone else agree?

    Yeah, you have to weld this thing. Here is my build.   You can certainly build a single drum with no welds, as you probably already know. There were instructions floating around the web.

    Fired up the UDS double drum today. Good smoke, ran 8 hours, smoked wings, thighs, ribs, and pulled pork (5lb butt). She ran great. We had a few unsuccessful attempts when we first built her, but we have tamed the beast!

    Yea, the MES is fantastic. I wanted to take a shot a learn wood pit smoking. I am finding that there is a lot of science behind it.

    I've been told that these kinds of smokers could be fueled with an all wood fire. The issue we are having is that to keep the temp in the right zone, we need to burn a good amount of wood. Once we out a new log on, we do get a large white cloud of smoke. What's the secret to keeping the fire hot...

    I'm smoking with a double barrel UDS smoker and I am still learning how to control it precisely. I have smoked plenty before using a MES with great... No awesome results. I'm a little bummed about what's coming out of the UDS. The food has a very strong bitter taste. I'm assuming it's creosote...

    Door has a little minor leak at the edge. Any suggestions how to get a seal around it? It's held shut by the 4 latches you see on each corner. Simply 4 pieces of L with bolts welded. Pics of our test run http://www.flickr.com/photos/61858552@N04/sets/72157626390913485/

    She is sweet. Held 230 with no problems at all. She has all the bells and whistles. Many build hours from a good friend and a little ingenuity made a real nice smoker.
