    Pulled Chuck Roast (Sous Vide)

Well, after a long hiatus from this site, chasing other pursuits, your posts about the glories of SVs integration into all the other aspects of our Q'ing "afflictions" caught my attention and has proven to be "addictive". Fortunately, I have a Restaurant Supply House that caters to us...

First shot at Bacon with Q

Sent you an email or two discussing the care package.   So, now I expect you'll be after my Mini-WSM.

First shot at Bacon with Q

Well, after reading this thread, Dave....I felt compelled to send you a care package.  Some stuff I got from Todd.  Also Dana's dehydrated ginger root.  As Todd use to do, I'll carry on his package filler with some of his specialty pellets.

    Clearance around WSM?

In a nutshell, you'll be fine.  As has been mentioned, 6 inches is more than adequate.  The high temps are in the bottom section, the upper sections quite a bit cooler, especially if you're doing low and slow, you'll be in the 220-250 range on the grid and less on the skin of the WSM.  I've...

    Seafish eLearning Seafood Smoking

Opening the link you provided takes me straight to a signup box asking for information prior to being allowed to proceed to "browsing".  Sorry, not interested in something that starts out like a "trap?" especially when one of the questions is my email addy.

Family Reunion: every year is better than the last

All I got to say is:  WOW!!!  It'll definitely take me a couple of readings to digest all that you did in such a short period. I think I just discovered in your words, why my smoking at altitude is never timed quite right.  My home is about 45 feet above sea level and our yearly trip (August)...

SQWIBS "Q"-view of Healthy Foods cooked in 2013

Oh, I get it........dang sun musta got to me.   The doc got me off white bread onto something with more seeds and twigs than ought to be legal, but, I make up for it with lots of BACON between toasted slices.

    Looking to replace the Treager

If I may, I have two close friends who use the Yoder and are extremely satisfied with it.  One moved up from a very dissatisfied experience with the Treager and constantly tells me that I should move out of the darkside (WSM) to the Yoder.  I can only see one drawback with the Yoder and it is...

    Quality pellets

I agree with Rexster, Todd's pellets are the real deal.  100%.  Been using them now for over 2 years and absolutely no complaints.  Great service too.  The hard part is deciding which to get.  REALLY like ...........   well, that's for you to decide.

My wife convinced me to buy a BBQ Guru DigiQ DX2

Similar results when I used the DigiQ with my WSM.  Almost a set and forget.  WARNING:  don't tell anyone else how easy it is with the WSM, otherwise, the mystique is gone from the WSM.  Most of my Qing friends think because I have a WSM, I'm dabbling in the black arts........ Now I'm trying to...

My wife convinced me to buy a BBQ Guru DigiQ DX2

Added the DX2 to my "arsenal" last week and it sure makes it a pleasure to smoke with the WSM (22.5).  Tomorrow, the DX2 meets my Mini-WSM and spatch-cocked chicken.

    Bradley racks

Anyone have a good online source for Bradley smoker racks similar to the ones I see Jeff posting in his newletters?  I've tried locally and all they want to do is sell me the whole smoker.  Any assistance would be appreciated. ~Dave

    Apple Pancake

You're making it awful difficult to follow my doctors orders to watch what I eat.  Good looking breakfast repast.

    Pickled Eggs (Lazy Bear Method)

On this point, was it a matter of personal taste you didn't like the Bread & Butter pickle vinegar or was there some reaction in the combination that created a foul beast, not suitable, unless you like kimchee?  I've got a jar of Farman's Bread and Butter Cucumber Chips about finished and a...

Adding more racks to 22.5 WSM?

I like that idea.  Got some smoked cheese and some salmon that needs smoking coming up and this looks like an excellent solution.  Using blocks, that is.  Alder blocks should work just fine.  If they smolder, the smoke will complement the chips and pellets.

Yes, definitely after.  I'm not that flexible, yet.....

Post A Picture of Your COMPLETED Mini-WSM Here ! (Mini Weber Smokey Mountain, MWSM)

Been lurking on this forum since my return after a long hiatus and got bit by the mini bug.  Since I have a 22.5 WSM, it seemed natural.   The build is complete.  I won't post pictures of the build because there's plenty here already and I copied most of what was done.  I don't believe in...
