Nice. With the bison and turkey bacon, it should be a pretty lean fatty, as fatties go. I'm also curious about the taste, texture and juiciness. Well done!
First of all, congrats on the free new grill! That's awesome!
Second, basic info on IR grills from Wikipedia: (http://en.wikipedia.org/wiki/Barbecue_grill)
"Infrared grills work by igniting propane or natural gas to superheat a ceramic tile, causing it to emit infrared radiation that cooks...
Glad a few of you were able to see the pics. I re-uploaded and reposted a few times with no luck. I've posted qview before with no problem, so I don't know what the issue is!
Weird, I see the pics fine with both Internet Explorer and with Google Chrome, but they aren't showing up with Firefox. Of course, I am pretty new at this. I'll figure it out!
At the wife's request, I made an ABT fatty for dinner last night. Started with grilled poblano and jalapeño strips, cooked bacon, monterey jack and cream cheese, and JD hot sausage:

First, the steaks. Just under a pound each:
Rubbed with Arthur Bryants Beef and Pork Rub:
Out of the smoker...

I'm using the Brinkmann Vertical from Home Depot. It must be an HD exclusive because I haven't found it anywhere else, even online. There are few things about it that are great. I like the double doors and the big wood chunk pan (for the size of the smoker). I wish it had adjustable venting...
I decided to try a couple fatties to take to a friends house for a bbq last night. I was a little nervous, but it wasn't nearly as difficult as I thought it would be.
Fattie #1 is ground beef with bacon, mushrooms and sharp cheddar.
Fattie #2 is sausage with pepperoni, green peppers...
That looks fantastic. I've been wanting to try some stuffed shrooms. I've got a pork shoulder waiting for the weekend, I may have to give those a shot too!
