I decided to try a couple fatties to take to a friends house for a bbq last night. I was a little nervous, but it wasn't nearly as difficult as I thought it would be. Fattie #1 is ground beef with bacon, mushrooms and sharp cheddar. Fattie #2 is sausage with pepperoni, green peppers, tomatoes and mozzarella. Wrapped and ready! The finished fatties, smoked at 250 on hickory for about 3 hours. Sliced and ready to eat! They turned out better than I ever imagined! Most people liked the Italian one better, but I personally preferred the bacon and mushroom. Either way, there will definitely be more fatties smoked around here! Thanks for all the inspiration!
