Smoked some porkstrami cured St. Louis ribs this weekend.

Ok, this is going on my list of things to try!

    Dino Ribs

Those look awesome! I've always wanted to try those but I've never been able to find them here until this past weekend. I was in Restaurant Depot and they have them. They're pricey though... I almost pulled the trigger but I went with St Louis ribs instead. After seeing these I'm gonna have to...

Trying To Decide Where To Re-Locate

From that list I'd have to say Kentucky first but if you really want to get rid of winter life Louisiana. I grew up in Kentucky and now live just across the river from Louisville, KY so I am a bit biased. If I could go anywhere though I'd move to Texas. I lived there for ten years and I'd say...

Pitts & Spitts Maverick 2000 + FireBoard Pellet Drive One Month Review

I’ve had my Maverick 2000 for a little over a month now, and after just two cooks, I knew I had to ditch the stock controller. It was way too basic for a smoker this well-built—definitely the "weak link" in the setup. I swapped in the FireBoard Pellet Drive, and the installation was surprisingly...

    Leftovers!

Sometimes the best thing about BBQ is the leftovers! I always look forward to Brisket Chili almost as much as the Brisket itself. This past weekend I smoked a Pork Belly and last night we had the best BLT's I have ever had. What are some of your leftover favorites?

Is Lone Star worth the wait vs Pitts & Spitts?

That looks awesome, I'm sure it was as good as it looks. You can never go wrong with literally anything from Weber.

Is Lone Star worth the wait vs Pitts & Spitts?

The first cook was an absolute success. I also got the smoke cage with it and I've never saw this kind of smoke ring from a pellet smoker.

Is Lone Star worth the wait vs Pitts & Spitts?

It's the 2000. When I saw how much room it had my decision was made.

Is Lone Star worth the wait vs Pitts & Spitts?

I decided to go with the Pitts & Spitts. I think I'm going to be happy with it. Plenty of room for large cooks.

    Feeding a large crowd advice

A warming oven is a must. Not just for holding Brisket but sides as well. It makes timing of everything much less stressful or even possible. When I lived in Houston there was a place to rent them. When I moved I bought one of my own.

Help me pick a new smoker!

I agree. I am hoping some folks that own some of these will chime in. I have a favorite that I'm leaning toward but for this kind of money I want to be sure.

Help me pick a new smoker!

I want more capacity mainly and the issue I had with the Masterbuilt was having to add chips. The high end models have a bigger fire box and use chunks so you can just load it and walk away. I'm all about simplicity.

Help me pick a new smoker!

I currently use a Pellet Smoker and I have been shopping for a High End model to replace my Pit Boss. The high end (Lone Star, Pitts & Spitts, Yoder) is pricy so I've researched it to death before pulling the trigger. My wife made a comment the other day though that caused me to rethink the...

Is Lone Star worth the wait vs Pitts & Spitts?

I want a Premium Pellet Smoker and I've narrowed it down to the LSG 42 and Pitts & Spitts Maverick 1250. I just got an email from Lone Star that their current delivery is 3 months +/-. The Pitts & Spitts is in stock at my local dealer. I like the looks of the Pitts & Spitts. It's built heavy...

    Chuck Roast for Chili

I usually make chili out of leftover brisket and it's always a big hit. This is a great idea to just make some chili!

    Pulled Ham question

I usually look for a shank. It seems like it turns out better somehow to me.

    Started on the Outdoor Kitchen

Brisket, that’s what’s for dinner! All the hard work was worth it. I sure enjoyed having the kids over for some quality time!
