Great looking Dino ribs. Job well done. I'll need to try the red current jelly on the Brussels sprouts. It would be a nice change of pace.

    Verifying I am Human?

I get this verification on three or four different sites now. It doesn't bother me too much. If the site is running slower it does hang around for a bit longer. Sometimes it's a flash or nothing at all.

So what do you do for St Louis cut ribs?

I'm in the St. Louis camp, and generally don't buy them unless they look good, which is why I pay a bit extra to buy them at a market with a meat counter and a real butcher. I have not tried trimming up a regular rib.

Jalapeño Cheddar Sausage…My first sausage attempt…

Good work! I have yet to make sausage. I am in the same camp with the KitchenAide. I’d be using it as a stuffer also. Cost aside, I’m not certain I’d buy a separate grinder and stuffer. There’s only so much sausage two old folks can eat, and there’s no room!

    Hello from Hamilton CAN

Welcome from California. You can get started with your gas grill and a couple of smoke tubes. Fill them up with wood chips and light them off. Plenty of smoke. With respect to recommendations, I’m a propane person. I do have a recently purchased GMG pellet smoker, but still prefer the upright...

Glad you had a decent steak. You should show them off with a picture or two. That'd really make us jealous. :emoji_laughing:

    Sunday Steak and Eggs w/qview

Good looking steak and eggs. Cooked to perfection. Steak and eggs for breakfast reminds me of a bar I used to go to on Sunday mornings for steak and eggs. Back then it was $4.75 and included a bloody Mary. Of course that was the late 70's, and of course we'd stay half the day playing dice...

    Salami Try #2

Nice setup. It looks like you are well on your way. I'm looking forward to seeing the results. I have not tried salami. Not sure I would go to the effort of putting together the setup you have. I'll leave salami to others for now.

    Friday evening Tri Tip!

I love tri-tip. Great cut of meat for grilling, as long I don't go past medium rare. Yours looks great. Nice job.
