You're living my dream. A slicer so I can cure bacon is next on my list. Congrats!

    Encapsulated Citric Acid

ECA gives the sausage/sticks that classic tangy flavor. So the flavor profile would be noticeably different, however, I don't think it would result in a "bad" summer sausage without it. If you don't have a dedicated stuffer, you might consider getting a cheap "jerky gun" to stuff with. As...

    BBQ Myths Video

Really entertaining and funny. Agree with most everything he says, especially the beer can chicken. It was my first cook, but during the cook I started to ask myself the same thing. "Is this really doing anything". Another grilling myth is leaving steaks out to get to room temp before grilling...

    Rotisserie Wings

Well done! How many wings fit in that basket? I was surprised that it took that long to cook at 400F. I cook mine on a Kamado Joe indirect at about 400F and I don't think they take more than an hour. Wonder if the rotisserie changes things?

Great idea! No fussing with rolling dough into a circle which I absolutely suck at 😂

Wow. Gumbo is on my bucket list. Tried once and failed with the roux mightily. I need to give it another go. Thanks for the detailed post!

    Smoker advice needed please.

Agree on the Traeger. They seem like another case of a product that was the first of its kind and failed to adapt over time, eventually getting passed by others. Gone the way of TiVo, Blackberry and Kodak.

    New Recteq Smoker/Dry Brisket

Curious to see responses from others. I've never been thrilled with my briskets either though I have a Kamado Joe. Eventually I'll get a RecTeq. My buddy, who is very much an amateur makes brisket every New Years Eve and it's the best brisket I've ever had. Makes me crazy :)

Same! I saw that meat and thought, oh my that's a well done prime rib! :emoji_laughing:

    Smoker advice needed please.

Sounds like a pellet smoker may be a good fit for you. Others will have brand recommendations and other thoughts I'm sure. I don't have one personally, but will likely go that way eventually for similar reasons that you mention. The "set it and forget it" aspect is great. Another idea would be...
