I don't have any time for a proper smoke tonight when I get home from tonight and thought I might try a higher temperature cook with the Weber.
Has anyone done baby backs with higher heat in the Weber at lets say somewhere around 350 degrees?
Any tips or thoughts on how they turn...

Ok, I cheated and grabbed a rib after 3 hours ( as you can tell by the pic). These are honestly the best ribs I've ever had. Keep in mind I'm from Washington State, and haven't found any great places in AZ to compare to.

I haven't had much time with a new baby around to use my new smoker, but I've done a few butts and tried some baby backs that were too well done. I used the 2-2-1 or 3-2-1 method, whichever one was recommended for baby backs. This time I'm going to go without foiling I think for about 4 hours...
