So I dont have photos BUT...the Wagyu came out pure magic! And surprisingly in about 14 hours I think with a wrap. The other one was dry sadly but ultimately I'd say it was a huge success. This is maybe my 3rd brisket and to take on such a big one and nail it decently I'm super happy

Wait i just thought of something...is it possible that because I basically sealed everything BUT the firebox as it created a large gap...that maybe even at full close im getting air? And because the main box is sealed tight the normal forgiveness of how the box was made has been removed causing...

So we have a store here called "Gulf Leisure" that basically has a monopoly on wood and smokers but they do get everything you could need for an upcharge haha. On average a 10lb bag of hickory chunks are about $30. Charcoal can range from $5 for cheap crap to similar to kingsford for almost $20...
And for reference I have 650 RTV on all seals and the main door has a nomex gasket. I took a lot of prep to make sure it didn't leak...and it doesn't! Haha
