I put a butt on the Rec Tec this morning at 225 F. Once the butt got up to about 165 F I wrapped it. When the Maverick read 205 I took the foil off and stuck in a hand held probe and it read 200. I decided to leave it in the smoker for a bit longer and now the temps have fallen to around 190...
