Temperature fall

I put a butt on the Rec Tec this morning at 225 F. Once the butt got up to about 165 F I wrapped it. When the Maverick read 205 I took the foil off and stuck in a hand held probe and it read 200. I decided to leave it in the smoker for a bit longer and now the temps have fallen to around 190. Should I wrap it again or pull it or what?
 
The juices are evaporating and cooling the butt off. If the bone pulls out clean, it's done. You can wrap it and let it rest to comfortably pull it. I think it will fine!

I’m with Mike on this one. I’ve have butts done anywhere from 195 to 207, just depends on the piece of meat. You can always probe and if the probe goes in like it’s going in warm butter you’re good to go. I see this is a couple hours late, what did you end up doing?
 
I ended up pulling it off the smoker after about 20 minutes and it actually turned out very good. Thanks for the tips!
