I am mostly curious about the Mini WSM's size and wondering if it would work alright with an AMNTS or AMNPS? I don't have either yet. Would one be preferred over the other in the Mini WSM?
I'm putting together a MWSM as an upgrade to the ECB that got me hooked on smoking this summer. Something larger is in the future.
Anyway, I want to smoke some cheese. Has anyone cold smoked in the WSM, and do you have any hints or cautions?

...no store bought pizza for us tonight! The honey bbq half were the biggest hit. We used Jeff's recipe for those. Our modified Skarberry wings didn't have a lot of zip and I'm sure that's because of the hot sauce we used and my (lack of) injection skills. We tried home made blue...
Darker wings will be Honey BBQ when it's all said and done; lighter ones are Skarberry. Barely visible is a pan of cauliflower "crack" with lots of cheese and bacon.
I attempted to get the temp probe in a wing but not sure how helpful that will be. We will just monitor and adjust smoker temps...

50/50 butter and Burman's Hot Sauce, dusted with Emeril's Creole Seasoning recipe. Covered with plastic wrap and in the fridge at 10am for a 3pm smoke.
Still using my modified ECB but in the past 3 or 4 weekends we have checked off a batch of chicken breasts, 20 lbs. of pork shoulder and some ABT's. On Monday we'll try 2 kinds of chicken wings and a pan of cauliflower and cheese. Think low carb mac and cheese, it's better than it sounds...
Howdy... I can smell your smoke from up the road in Holly. I'm newer than you, my second session is happening right now with 20 lbs. of pork butt on my El Cheapo Brinkman, but I'm coveting a WSM22.
Bottom line: I didn't have to buy pizza! Lit the chimney at 2:30p, put food in at 3:00p.

Just registered on this forum after getting the bug this weekend. Parts and pieces on order to modify the ECB that was in the corner of the shed. First smoke in a couple of weekends, and looking forward to it.
