    Thanks! It ended up becoming a little more involved than I originally planned. I had a specific location for which I was “granted permission” to store it on the porch. That ended up being more trouble to design for than fitting the smoker on the cart!

    I think it was a metal box used to file papers. Nothing special inside. Just some rods to keep the AMPNS off the bottom for better air flow and a small ash catching pan

    I had the exact problem with high temps on my new Cabela’s MES 40 2 weeks ago. They sent a new high temp cutoff and controller board. Seems to be ok now. MB customer service was a pleasure to deal with. I have little doubt that they will make you happy if you call.

    So I may have messed this one up. Followed the recipe exactly except I read 225 instead of 325 on my mes 40. Saw the error of my ways about 2.75 hours into it when the probe read about 95. Cranked it up to 275 but after 4.5 hours it just made it to 135. Has it been in the danger zone too long...
