I have the same smoker but I have never cooked with the internal temp setting. I usually just set a time and temp. I bought another meat probe because the one in my smoker seemed to be off a few degrees, but from what I have read that seems like a common thing.
I was just going to do my turkey whole this year, but it seems that spatchcocking one is very popular. I know everyone says they cook more evenly, but I am also assuming they cook faster as well?

that's actually what I was going use was apple and hickory. Being as I have to use wood chips in my smoker do you soak them or leave them dry. I have noticed when I soak them I do get smoke for a lot longer just takes a little longer to start? I am thinking since turkey isn't a really long cook...

I have a charbroil smoker. I have never timed how long mine takes to pre-heat although sometimes it does seem to take a little longer. I don't believe it had ever taken longer than an hour though. btw, how do you like your smoker?
