Help with a Pork shoulder ham

We are attempting to convert a shoulder into a ham. Deboned and put in pops brine for 16 days. On the smoker as we speak. Problem is I have to leave in one hour and I am only at 110 degrees. Is it possible to stop cooking and throw in refrigerator and finish cooking Sunday. I figured I could...

Looking to start a new Refrigerator smoker build.

I am looking to replace my GOSM as it doesn't want to get very hot anymore with a refrigerator build.  I am tossing around a few ideas for the heat source.  Do I go with electric or make it into a pellet pooper?  The items we like to smoke are Turkey, Bacon, Jerky, Brisket and sausages.  I do...

    Landjager Try. Fermento question

Nephew gave me some venison this week and asked me to make some jerky and/or sausage,  Thought I'd try some Landjager, the easy type.  The recipe calls for fermento.  Is there something I can substitute for this or do I need to order this on-line. Thanks

Pork Belly prices in Southern Wisconsin

I am down to my last pound of bacon and decided I need to make some more.  The prices were rather high if you ask me.  A place in Elkhorn, WI want $4.29 lb. and the locker in Clinton, WI wants $3.89.  Does this seem high or is it just me being cheap.  After all, bacon is half fat!

    GOSM mod for AMNPS

Decided to modify my GOSM to smoke a turkey for Christmas. Not having had success using the AMNPS inside the GOSM (kept burning out), decided to fabricate a small box on the side. I had some steel left from a pole barn I built so I used some to create a 6"x6"x9" box and screwed it to the side...

    1st try at Summer Sausage

I made some 10 lbs of summer sausage  using a packet of Lem's mix.  Through it in the smoker and it came out looking fantastic.  As it is cooling, it appears to be shrinking up.  Is this normal? Thanks,

    GOSM and the A-MAZE-N-PELLET-SMOKER

A while back, I purchased an A-MAZE-N-PELLET-SMOKER.  has anyone used this in the small GOSM.  I want to try this on a brisket Friday and need to know where to put the pellet smoker.  This is only one vent on the GOSM located on top.  Is this going to give me trouble with enough air flow...

Maverick ET-732 remote keeps erroring out.

Back in June I was given a Maverick ET-732 remote thermometer set.  I has served me well for the most part til Sunday.   I put a ham in the pellet grill and turned on the Thermometer.  The remote was registering well and took it inside and set it on the counter.  After about 5 minutes it beeped...

Sending Jerky to California from Wisconsin

Last night I picked up some sirloin steaks and sliced it up for some jerky.  My son out in San Diego asked if I could send some his way.  That's the dilemma.  We are in WI and I wonder if it would spoil even if I shipped it overnight.  The jerky will be marinating in a mixture of  coke-a-cola...

    Outragous shipping costs

Recently I ordered a digital thermometer from Amazon.co. due to the fact that it had free shipping.  Well the company that sold/shipped the thermometer was Fred's Music And BBQ.com.  Along with the thermometer was an assortment if Tasty Licks sample spice packets.  I tried two of the samples...

    Second Batch of bacon

About a month age I thought I would try to make some bacon.  I picked up the Charcuterie book by Michael Ruhlman and Brian Polcyn.  I followed there advice and made some bacon.  My wife thought it was the best she had tasted.  My take, a little too salty.  So a week ago I picked up another pork...

Anyone use a pellet grill for smoking?

I am contemplating the purchase of a pellet grill to replace or compliment the GOSM.  Do they cook as well as they claim? Overall, are the pellet grills worth the money?  I am looking at spending 600-900 on one.  A couple brands I  am looking at are Royall and Sierra.  Any opinions?

Sweet Home Pellet Smoker or Royall Pellet Smoker- Anybody use one?

I am considering purchasing a pellet smoker and came across these made in California and Wisconsin.  They both appear to be fairly new.  I don't have thousands to spend and not quite happy with the ones made in China.  The Sweet Home Grills have a 5 year warranty on the steel, 2 years on the...

    The redhead

A man is dining in a fancy restaurant and there is a gorgeous redhead sitting at the next table. He has been checking her out since he sat down, but lacks the nerve to talk with her. Suddenly she sneezes, and her glass eye comes flying out of its socket toward the man. He reflexively reaches...

    Smoking a ham?

Is it possible to smoke a ham? We usually cook these on a weber but after getting the smoker, I thought we may give it a try. My wife would like some bean soup so I need to get a ham bone to throw in along with some ham for added flavor. I tried to search on ham, but nothing came up. Thanks...

Help with removing the membrane from some babybacks

I seem to be having a lot of trouble removing the membrane from some fresh babybacks I picked up from the butcher. Since these are my first attempt, I don't care to mess it up. When I try to get the membrane of all it does is tear in little pieces. I grab it with a paper towel to help hold on...
