    What is the foil in bottom for?  I have never had any kind of issue like you are talking about nor can I think of anything that would cause that issue.

    Use stainless when you can or non galvanized you be good, I also had a MES and I used it 4 times and sold it I did not like it at all..  Nothing I have ever had and I have had lot of smokers and grills can campare to the UDS for price and simple use and the flavor is awsome.

    No deflector I dont feel like need one, and yes I will vac out the ashes till I make up my mind to build a basket, I think I am going to do a 35 gal next and try the hanging meat way see which I like more.

    MES reliability

    I had the MES 30 and hated it so I sold it and got a pitbarrel smoker and love it, me I would never have another smoker but the pitbarrel.

    I had no problem with smoke in mine I am thinking maybe your element is bad, I would call the company and ask for a replacement element.
