Why complicate it with temp gauges? Follow the lighting instructions and don't worry about temp. That's the beauty of the PBC. Easy, thoughtless, cooking. I cooked everything in the one I had and not one time did I check the temp of the cooker. Everything turned out amazing.
I know this thread is old, but it is relevant to me. My bbb looks like this on day 8. Curing for 14. What if it looks like this on day 14? Shouldn't it all be red? I used the digging dog farm calculator for my cure.
I was never totally satisfied with my cooks until I started smoking everything at 275 -285. Haven't been let down yet with that temp. I used to smoke around 225.
