    Those look great. I did a lil snow smoker action myself today. Went with 3-1-1. With the last two hours in the oven. I sadly still have around 30" on the ground with more in the near future and no end in sight lol. Great winter to live in North Dakota lol

    And for my final test before people show up for Xmas in my new master built electric. Six different cheeses. Two pounds of each. White sharp cheddar Sharp cheddar Extra sharp Mozzarella Pepper jack And Colby Temp only goes as low as 100. So I put ice in two pans on the bottom two racks...

    Put it in a water, cousher salt, brown sugar, and wild Eddies season salt for 36 hours. Used a random chicken rub Smoked it with apple and a lil pecan for 2 hours at 230. Had to go a lil quicker than I'd hoped but it turned out great
