Is there a guideline for the size if s turkey breast given the size of the whole bird? I have a smaller smoker (SmokinIt 2D) and I'm considering buying a big turkey then removing the breast meat and smoking it boneless - I can't really fit a big turkey carcass in there.
Is this a good idea?
Been doing some turkey thighs in my SmokinIt 2D but last night something great happened. 225F for about 3 hours, then decided to finish in the oven at 300F in a covered pan for about an hour. A friend came over just as the hour was up so I just shut off the oven and let things sit. After...
I did some fairly meaty St Louis ribs yesterday.
Used Meathead's Memphis Dust, with a 1 hr dry brine using just salt.
225 F temp with cherry wood - in my Smokin-It 2D so I know the temp was pretty spot on.
After 3 hours wrapped in foil for 2 hrs.
After 2 hours I unwrapped and did the bend...
Been thinking about this quite a bit since I got my Smokin-It 2D.
Recent tragedy near me:

I've been buying pork butt at a local Amish market @$3.49/lb, I'm thinking there has to be better pricing somewhere.
Chicken is pretty cheap, but I haven't seen brisket in awhile. I'm in the western Philly suburbs.
Help!
What's the best way to smoke butts ahead of time for later use? When to pull, and how to reheat. Looks like I might have to smoke some the day before use...
So my best friends know I have a new smoker, and I'm (we're) itching to try it out Memorial Day weekend.
Pretty much decided on pulled pork to start, with sides and dessert. I know from previous experience I need about a half-pound of meat per person for serving, and I'm thinking we are...
So when FedEx emailed me to say this was on my front step, I had to skip out of work at lunch to go see, besides it was supposed to rain and I didn't want to deal with 90 lbs of wet cardboard wrestling it in the front door.
Managed to get it in the door and deposited the box in my kitchen. ...
I have had an electric tube-type smoker for a long time, but with living in a townhouse, every time I start it up, I get complaints from neighbors. So I don't use it unless my neighbors are away. (I have an end unit.) I have a raised deck so the smoker would be about 10 feet from the house...
Hi, I'm Gregor from PA.
Looking to get back into smoking as there are no good BBQ places in my area :(
Considering a box-type electric smoker as the tube smoker I have does great but upsets the neighbors - I live in a town house.
