For sure a pro fabricator ! We build a lot of smoker it caught my eye for sale and I had to buy it . It was very dirty and needs somethings fixed but I had to light a fire in it put a 1/2 light chimney in it and a full one at 2:00 and at 4:30 it was still 300 in both sides!
Yes mine are same size for comp turn in I wasn’t worried about size today I was trying new rub and pit temps I was using a pellet cabinet I built I built a stick burner for competition so have to adjust my technique some!
Had a competition last week with my new pit got 3rd in chicken I wasn’t happy with it so I changed up a few things with pit and fire and different rub I am happy now !
Thanks I did 6 last year won some lost some I have a cabinet style pellet smoker I built I was using but love the stick burner the rf just didn’t do what I wanted hard to explain
Been a long process I first built it as a rf didn’t like it cut it all apart rebuilt it I have smoked 100# of Butt’s 60# of loins and 5 brisket and 200# of chicken and ribs and love how it smokes finished trailer this week! Have a competition Sunday can’t wait !
Ok it started out a reverse flow a last minute firebox change messed it up worked of but couldn’t get enough heat in cc so I cut the thing apart and rebuild it in 2 long days but it was worth it I couldn’t be more happy even heat on top side to side bottom is even heat !
Depends on how much salt is in rub the longer they sit rub will pull Moisture out of Meat and make it salty a day will be fine much longer I say no if you have to throw them in crockpot and cook all day !
