Baby Back Ribs - Help Please

I've used Costco ribs before and they were fine. In your picture, the membrane is already taken off. I do my ribs at 250. You can do the 3-2-1 method but for BB ribs I'd go 2-1-1. As far as your choice of wood. Id go with Hickory if I was smoking them.

    First pork loin

I just did a 5lb pork loin last weekend. I smoked it to 140 at 275 and it only took 2hrs. I didn't need to wrap it. I would say if you go at 225-250 and it's not at temp after a few hours, then you can wrap it since it won't need to take on any more smoke.

    3-2-1 Baby Backs

When I do BBs, I go 2-2-1. St. Louis I'll do the 3-2-1.

    Roll Call

That's one place in the Des Moines area I have yet to try. Living in Urbandale doesn't give me much of an excuse. Though ever since I got my smoker this summer. I haven't been to any BBQ restaurants.

Too cold to smoke my boston butt, but it's already in the smoker

Sorry but I'm not familiar with that unit. If you have a welding blanket to wrap around it maybe that will help? Once again, sorry I'm not much help.

What kind of smoker do you have? Are all your vents open?

    smoked mac and cheese.

I did smoked Mac and cheese awhile back. The family loved it but I wasn't a big fan. Think I used apple or black cherry wood.

    First real smoke on wsm

If you want your chicken with a nice crisp to it, you can try what I do. I just take the water pan out and let it go direct heat. I love the way they turn out.
