No foil St Louis Ribs w Qview

Just threw a couple racks of St Louis ribs into the WSM. Planning on no foil for about 6 or 7 hours. We will see how they turn out. Windy day today so I had to wrap it up with a welding blanket. Rubbed with season salt sugar pepper and vinegar on one and SPOG on the other

    St Louis no foil ribs

Decided to smoke some ribs today. I also decided to try not foiling them for the first time ever. I must say I will never ever foil another rack of ribs again. They were freakin amazing. Used jeffs rub on some of them and a salt and pepper based rub on the others. Hickory and cherry wood...

First brisket w Q-view no stall????

Guys I put my first brisket ever on my 18.5 WSM this AM at 0200. Temp stayed around 250-260 the entire smoke. I will post some pics in a minute but first I have a question. My brisket never stalled at all. I am 5 hours into my smoke and it's already 183 degrees IT in the thickest part. Seems...

First wild game smoke with q-view

I just put on a ham from a 80 pound sow we trapped the other day. I have grilled with this recipe and baked with this recipe before with success so I'm guessing smoking should be no different. Here is my recipe. I injected the ham with 3/4 cup simply apple juice (don't buy off brand or it...

    Spare ribs need advice fast

I have been cooking my first rack of ribs ever on my wsm and used the 3-2-1 method with temps ranging 225-245 mainly around 240. My question is I have 0 pull back on the bones and also the bend test doesn't show any splitting between the ribs at the bend. It's been the full 6 hours plus...

    First pulled pork question

I just started smoking my pork shoulder today at 4 am on my WSM.  Things have gone pretty smooth for the most part.  Cooking at around 240.  I am at 160 right now and I am expecting the stall to hit soon.  My question is this: I am having dinner with some friends tonight at 6PM and I was...

    Jeffs Rub Question

This may be a dumb question but I received Jeffs Rub as a gift this Christmas from my sister and she gave me 3 different recipes.  2 of them were rubs and one was the BBQ sauce.  Which of the 2 rubs is the one everyone refers to as "Jeffs Rub."  Is it the "Jeffs Naked Rib Rub" or "Jeffs Texas...
